- 1 tbsp oil
- 1 tbsp butter
- 1 medium diced onion
- 1 tsp minced ginger (or ginger paste)
- 2-3 cloves minced garlic (or crushed)
- 1.5 lbs boneless (skinless chicken breasts, cut into ¾-inch chunks)
- 4 tbsp tomato sauce
- 1 tbsp garam masala
- 1 tsp paprika (adjust to taste)
- 1 tsp fenugreek (powder, seeds, or mustard seeds optional)
- 1 tsp cumin
- 1 tsp coriander
- 1/4 tsp cayenne pepper
- 1 cup half & half (or low-fat yogurt)
- Hot cooked rice and naan for serving
Heat a large skillet or medium saucepan over medium-high heat. Add the oil and butter, then add the diced onions. Cook the onions until they turn lightly golden, about 3-4 minutes. Stir occasionally.
Add the minced ginger and garlic. Cook for an additional 30 seconds, stirring to prevent burning.
Add the chicken, tomato sauce, and all the spices (garam masala, paprika, fenugreek, cumin, coriander, cayenne pepper). Cook for 5-6 minutes or until the chicken is fully cooked.
Pour in the half & half (or yogurt) and simmer for 8-10 minutes, stirring occasionally.
Serve the creamy chicken over Basmati rice or with naan for a delicious meal.
