Ingredients

  • 1 tbsp oil
  • 1 tbsp butter
  • 1 medium diced onion
  • 1 tsp minced ginger (or ginger paste)
  • 2-3 cloves minced garlic (or crushed)
  • 1.5 lbs boneless (skinless chicken breasts, cut into ¾-inch chunks)
  • 4 tbsp tomato sauce
  • 1 tbsp garam masala
  • 1 tsp paprika (adjust to taste)
  • 1 tsp fenugreek (powder, seeds, or mustard seeds optional)
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/4 tsp cayenne pepper
  • 1 cup half & half (or low-fat yogurt)
  • Hot cooked rice and naan for serving

Instructions

  • Heat a large skillet or medium saucepan over medium-high heat. Add the oil and butter, then add the diced onions. Cook the onions until they turn lightly golden, about 3-4 minutes. Stir occasionally.
  • Add the minced ginger and garlic. Cook for an additional 30 seconds, stirring to prevent burning.
  • Add the chicken, tomato sauce, and all the spices (garam masala, paprika, fenugreek, cumin, coriander, cayenne pepper). Cook for 5-6 minutes or until the chicken is fully cooked.
  • Pour in the half & half (or yogurt) and simmer for 8-10 minutes, stirring occasionally.
  • Serve the creamy chicken over Basmati rice or with naan for a delicious meal.
